[S] HOWTO - special characters on axis labels?

I am putting axes labels on a persp() surface.  I want to put a bar 
over the z-axis label because it represents the mean value.  How 
do I do this?
To make things more tricky, I am grabbing the axes labels from a 
datafile.  How do "code" the label in the data file so it will put a bar 
over the label?
