How to set the font type on UNIX systems

Hi all,

I am almost afraid to ask, but....
How do you set the font type on a UNIX system when plotting to
postscript files.
The header seems to be in ARIAL, the text in the margins of the plots is
in COURIER.
How can I change COURIER to ARIAL????
