I don't know the answer to 1) but suspect that you can't. The answer to 2) 
is rather simple: use the the zlim argument in image() to keep the intervall 
of values covered in the image constant throughout your plots. That will 
also keep the color assignment constant.

I am using image() for coloured plots. I have two questions:

1) How do I specify colours other than by changing them in the graphics 
device (e.g. motif)
2) How can I control the colour coding, so that when using different 
datasets I always maintain the same colour for the same interval?
